Description

Kitchen Manager — Tancho Sushi

About Tancho

Tancho is a high-end, fast-casual sushi restaurant focused on exceptional food, hospitality, consistency, and guest experience.

Our culture is built around a simple belief: the customer experience is our top priority, and every person in the organization plays a role in delivering it.

We believe great restaurants are built by great teams—people who support one another, take pride in their work, and understand how their role contributes to the guest experience.

About the Role

We are looking for a bilingual English/Spanish Kitchen Manager to lead our back-of-house (BOH) team.

Sushi experience is not required. We are looking for an experienced restaurant leader who knows how to develop people, build a positive culture, create accountability, and run an organized, high-performing operation.

While this position leads the BOH, it is also a critical link between the Front of House and Back of House. The Kitchen Manager works closely with the General Manager to ensure both teams communicate effectively and operate as one restaurant, one team, focused on one customer experience.

What You'll Do

  • Lead, coach, develop, and retain the BOH team
  • Build a positive, professional, and accountable team culture
  • Recruit, onboard, train, and develop employees
  • Lead daily kitchen operations and service execution
  • Partner with the General Manager to maintain strong communication between FOH and BOH
  • Keep both teams aligned on service flow, timing, product availability, guest needs, and operational issues
  • Manage scheduling, staffing, labor, inventory, food cost, and waste
  • Maintain high standards for food quality, cleanliness, organization, and food safety
  • Develop future BOH leaders and create opportunities for advancement
  • Implement and maintain Tancho's operating procedures and training standards

Learn the Operation Before You Lead It

Every Kitchen Manager completes a structured, hands-on training program to understand the Tancho operation from the ground up.

You will work alongside our team and train in every BOH position you will oversee, including:

  • Dishwasher
  • Sushi Line
  • Sushi Cook
  • Sushi Leader
  • Kitchen Manager responsibilities

You will also train in our prep kitchen to understand how our products are received, prepared, handled, and supplied to our restaurants.

We believe great leaders should understand the work they are asking others to perform.

What We're Looking For

  • Fluent English and Spanish required
  • Restaurant management or significant restaurant leadership experience
  • Proven ability to lead, coach, and develop teams
  • Strong communication and people-management skills
  • Experience managing scheduling, labor, inventory, food cost, and restaurant operations
  • Ability to build strong relationships between FOH and BOH
  • High standards for hospitality, quality, cleanliness, organization, and execution
  • Ability to create accountability while maintaining a positive culture
  • Strong understanding that every decision ultimately impacts the guest experience
  • Sushi experience is a plus, but not required
