Description

Miriam's Bakeshop is a New York-style Jewish and Italian bakery serving the Seattle area. We specialize in artisan breads, challah, babka, rugelach, Italian cookies, and seasonal pastries made from scratch. We operate both a production kitchen and a retail storefront and are seeking an experienced baker and leader to oversee daily production and coordinate operations between both locations.

Position Summary

The Production Manager & Lead Baker is responsible for managing daily bakery production, supervising staff, maintaining quality standards, and ensuring smooth communication between our production kitchen and retail store. This position is ideal for a skilled baker who enjoys leadership, organization, and building systems that help a growing bakery succeed.

The successful candidate will be comfortable working overnight and early morning shifts, leading a team, troubleshooting operational issues, and ensuring products are delivered accurately and on time.

ResponsibilitiesProduction & Baking

  • Mix, shape, proof, and bake breads, pastries, cookies, and other bakery products.
  • Maintain consistent product quality and presentation standards.
  • Follow and help improve recipes, production schedules, and bakery procedures.
  • Monitor ingredient inventory and communicate ordering needs.
  • Ensure food safety, sanitation, and health department compliance.
  • Maintain a clean, organized, and efficient production environment.

Team Leadership

  • Supervise, train, and support bakery and front-of-house staff.
  • Create and maintain daily production schedules.
  • Hold staff accountable for performance, attendance, cleanliness, and quality standards.
  • Assist with hiring, onboarding, and employee development.
  • Foster a positive, professional, team-oriented work environment.

Operations Management

  • Coordinate communication between the production kitchen and retail storefront.
  • Ensure products are prepared, packaged, and delivered accurately and on time.
  • Troubleshoot operational issues and adjust schedules as needed.
  • Monitor waste, labor efficiency, and production goals.
  • Assist ownership in improving bakery systems and workflow.
  • Ensure both locations maintain high standards of organization, cleanliness, and customer service.

Product Transportation

  • Transport baked goods, ingredients, and supplies between the production kitchen and retail storefront as needed.
  • Verify orders and deliveries are complete and accurate.
  • Maintain safe and professional transportation practices.

Qualifications

  • Minimum 3 years of professional bakery experience required.
  • Previous supervisory or management experience strongly preferred.
  • Strong knowledge of bread and pastry production.
  • Ability to lead a team while remaining hands-on in production.
  • Excellent organizational, communication, and problem-solving skills.
  • Ability to work independently and make decisions with minimal supervision.
  • Valid driver's license and clean driving record required.
  • Reliable transportation.
  • Ability to lift and carry 50 pounds repeatedly throughout the shift.
  • Ability to stand, bend, and work in a fast-paced environment for extended periods.

Schedule

  • Full-time position.
  • Overnight and early morning shifts required.
  • Shift start times are as early as 1:00 AM.
  • Weekend availability required.
  • Flexibility to work between both bakery locations as needed.
