The Dough Preparer is the core of our bakery production line. You are responsible for cutting, filling, shaping, and traying all dough products — including our signature Señorita bread — at the pace and quality standard set by the Lead Baker. This is a skilled, physically active role that requires speed, consistency, and attention to detail. You are one of four Dough Preparers on your shift, and your individual output directly impacts whether the team hits its daily tray target.

KEY RESPONSIBILITIES
Dough Production
• Portion dough to the correct weight for each product using bench scales and established portion guides
• Add filling accurately — correct amount, even distribution, and proper placement for each SKU
• Shape and seal each piece to the Ling Nam Express standard — consistent size, clean seam, proper finish
• Lay assembled pieces on trays in the correct count and arrangement for baking — standard is 52 pieces per tray
• Maintain a personal output target of 25 trays per day at full production capacity (100 trays total / 4 preparers per shift)
Quality & Consistency
• Follow all recipe specifications and portioning guides exactly — consistency across every piece on every tray
• Self-inspect your work before submitting trays to the Lead Baker — flag any trays that do not meet standard
• Alert the Lead Baker immediately if dough quality, filling supply, or equipment performance is impacting your output
Sanitation & Food Safety
• Maintain a clean and organized prep station throughout the shift — wipe down surfaces, manage waste, and keep tools in order
• Follow all food safety protocols including handwashing, glove use, temperature monitoring, and allergen handling
• Complete assigned sanitation tasks at shift open, mid-shift, and close
WHAT WE'RE LOOKING FOR
Required
• Ability to work quickly and consistently with your hands — this role requires manual dexterity and sustained focus
• Comfortable working in a hot, fast-paced bakery production environment for an 8-hour shift
• Able to stand, bend, and lift up to 50 lbs throughout the shift
• Reliable, coachable, and a strong team player
• Food Handler Certification (or willingness to obtain within 30 days of hire)
• Prior experience in a kitchen, bakery, or food production environment preferred — we will train the right person
Preferred
• Familiarity with Filipino or Asian bakery products
• Experience with high-volume dough production or bread assembly
• Bilingual in Filipino (Tagalog) or Spanish
$18 - $21 per hour
