The Bakery Production Associate is the final step in the production chain — you take assembled trays from the Dough Preparers through the oven and into the guest's hands. You own all oven cycle management, finished product packing, and staging for front-of-house. This role requires precision timing, attention to bake quality, and the ability to keep pace with a team of four Dough Preparers producing up to 25 trays per hour.

KEY RESPONSIBILITIES
Oven Management
• Load and unload oven trays on a consistent schedule to maintain bake quality across all batches
• Monitor oven temperature, humidity, and timing for every product — adjust as needed based on product type and batch volume
• Coordinate tray intake with the Lead Baker to ensure a smooth, uninterrupted flow from assembly to oven
• Log oven temperatures and bake times as required by food safety protocols
Packing & Staging
• Pack finished baked goods to brand standard — correct count, presentation, and packaging for every product
• Label all packed product with item name, date, and required allergen information
• Stage packed product for front-of-house pickup and display restocking in a timely manner
• Inspect all finished product before packing — do not pass items that fall below the Ling Nam Express quality standard
Sanitation & Support
• Maintain a clean oven station and packing area throughout the shift
• Follow all food safety protocols including temperature logs, FIFO rotation, and allergen handling
• Complete sanitation tasks at shift open, mid-shift, and close
• Support the Dough Preparer team and Lead Baker with additional production tasks as directed
WHAT WE'RE LOOKING FOR
Required
• Ability to manage multiple tasks simultaneously — oven timing, packing, and quality checks happen in parallel
• Strong attention to detail on bake times, product counts, and packing standards
• Physically able to stand for 8 hours, lift up to 50 lbs, and work near high-heat commercial oven equipment
• Reliable, fast, and composed under production pressure
• Food Handler Certification (or willingness to obtain within 30 days of hire)
Preferred
• Experience operating commercial convection, deck, or rack ovens
• Background in a high-volume commercial bakery or food production facility
• Bilingual in Filipino (Tagalog) or Spanish
$17 - $20 per hour
