James Coffee Co. is a San Diego-based specialty coffee roastery with five cafe locations and a growing wholesale program. We're passionate about craft, quality, and community and we're now bringing that same dedication to our artisan bagel program, Gracie's Bagels. Inspired by global flavors and built on a slow ferment bagel dough, Gracie's Bagels is a concept baked out of our Escondido kitchen.
The Role:
We're looking for a skilled, experienced Bagel Baker to join our kitchen team and help us bring Gracie's Bagels to life. You'll be responsible for producing consistent, high-quality artisan bagels. This includes mixing and shaping dough to baking and finishing while upholding our standards for flavor, texture, and presentation.
Responsibilities:
• Mix, proof, shape, and bake artisan bagels from scratch daily
• Prepare all bagels with precision and consistency
• Manage dough fermentation schedules
• Maintain a clean, organized, and food-safe workspace at all times
• Monitor ingredient inventory and communicate restocking needs
• Collaborate with the kitchen team on new flavor development and seasonal specials
• Follow all food safety, sanitation, and health code standards
Qualifications
• Minimum 1–2 years of professional baking experience (bagels, bread, or artisan dough preferred, but any pastry experience is required)
• Strong understanding of fermentation, dough hydration, and baking techniques
• Ability to work early morning shifts and maintain a consistent schedule
• Reliable, detail-oriented, and able to work independently
• Experience in a commercial kitchen or bakery environment
$20 - $24 per hour
